Scott's Cajun Onion Chicken Ham Soup
First peal three pounds of onions

Puree half in the food processor, and sliced the other half in the same machine

Add about eight tablespoons of olive oil in the bottom of a gallon and a half soup pot or larger

Add in half the pureed onions

Add in half the sliced onions

Add in about six ounces of chopped garlic

Add in the rest of the sliced onions

__________ Start Food Processor Mixture

Add to the other half of the pureed onions in the food processor

Add three tablespoons Italian seasoning

Add one tablespoon oregano

Add a teaspoon thyme

Add a half teaspoon garlic powder

Add a half teaspoon of Pepperica

Add several dashs of hot curry powder

Add several dashs of Chinese five spice

Add several dashs of Nutmeg

Add a quarter teaspoon of cellery powder

Add a cup of white wine

Add four ounces of Jack Daniels Whisky

Add two ounces of soy sauce

Add four teaspoons of Lea and Perrins

Add two and a half teaspoons of Tabasco sauce

Add two teapoons of Angostora bitters

Add a teaspoon of chicken and meat seasoning

Add ten beef bullion cubes

Add four ounces of horse radish

Pureed the whole mixture in the food processor and put it in the soup pot

Stir up the ingredients in the soup pot

Add another cup of white wine

Add pads of a stick of butter or magarine

Turn on the soup pot to medium high to let it heat up, reduce to medium or lower once it boils

Prepare about two pounds of baked whole chicken about two thirds dark meat and one third white meat

Puree one pound and dice one pound and add that to the soup mixture

Add two pounds of the Hickory smoked ham one pound pureed one pound and diced and add it to the soup mixture

Stir in one cup of milk

Add ten chopped strips of lightly cooked bacon

Add about two more cups of milk or more to desired stewlike consistency

Add two teapoons of chopped parsley

Add 12 bay leaves

Simmer on medium low for a half hour with occasional stirring

Simmer on low to simmer for another hour stirring occassionally

Makes about a dozen servings.

I recommend cleaning up while working which is good advice while cooking.
